Ingredients
- 1 cup cashews, soaked for 2 hours
- 1 1/2 cups water
- 1/2 cup strawberries
- 1/2 cup raspberries
- 1/2 cup blueberries
- 1/4 cup coconut oil, melted
- 2 tablespoons raw agave or honey
- 1/2 teaspoon non-alcohol vanilla extract
Instructions
- Blend the cashews with the water until smooth
- Add the berries and blend until smooth
- Strain the mixture through a small hole strainer to remove seeds
- Rince your high-speed blender and put the strained mixture back in
- Add the sweetener and vanilla extract
- Blend well
- Add the melted coconut oil and blend slowly until incorporated
- Granish with some berries and shaved coconut
- Enjoy!
Notes
You can use more or less water for consistency preference. Straining the smoothie is not a requirement but some people don’t like the seeds. You can substitute the vanilla extract with a little bit of scraped vanilla bean. Fresh berries can be substituted with frozen ones when not in season. Soak the cashews overnight in the refrigerator for your morning smoothie!
