Second Day of Raw Culinary School

Granola

The second day went like a breeze. Remember the granola?

Well first thing in the morning… we tasted it. After removing out tray from the dehydrator we took some granola, mixed it with fresh apple and pour the raw almond milk freshly made the day before and it was DE*LI*CIOUS! I am actually eating some more as I write this post. Then… we made a whole bunch of incredible nut milks… I chose cashew nuts. Other students chose pumkin seeds and it gave their milk a green tint! How cool is that!! Then we went on to make Lasagna! Yes!! Raw lasagna! Here are the main ingredients: zuchini, herloom tomatoes, cashew nut cheese, marinara sauce and pistacchio pesto. What a delight! We also learned new ways of cutting vegetables with out knives and with the Japanese mandoline..

Now let me tell you… this is absolutely out of this world! You can actually have this at the restaurant. The 105degrees Cafe officially opens its doors Saturday September 12th at 5pm! I hope to see you there!!! Tomorrow is Coconut day. Yes the whole day is going to be about coconuts which is an ingredient extensively used in raw desserts…. We are going to learn how to use the cleaver to open them. Hope all my fingers will still remain attached…
