Friday was the graduation of Level I at 105Degrees Academy. Everyone had to plan and execute a 3 course meal. Appetizer, Entrée and Dessert. There was a lot of different ideas, beautifully plated and tasting quite delicious. All the graduates took over the patio and we shared our creations together. It was a great time. Then Chef Kenney and Chef Raissi came to give us our certificate of completion and congratulate us on our achievement.

Sprouted Lentil & Roasted Vegetable Salad with Light Vinaigrette
Wild Mushroom and Ricotta Ravioli
Chocolate Mousse & Tiramisu Cream Parfait
We had to produce two servings of the menu. One left behind for the judges and one to eat – or in our case share with our fellow graduates.
