First Day of Raw Culinary School

Thai Cucumber Salad

Today was the first day at 105degrees Academy. It was a fantastic day! We quickly got into recipe making… But first, the knives! They are beautiful and sooooo sharp! Two of the 9 students had a little encounter between their fingers and the knife… not too much damage though. We learned how to julienne red and yellow peppers and cucumbers. I need to practice… my julienned vegetables were a little too thick. Well, first day of class and no culinary training… it is to be expected to have thick julienned vegetables!

First dish we learned to make: Thai Cucmber, Sesame Cashews, Mint Leaves and Sweet Red Chilies Salad. What I have learned by julienning the components was that first of all, it looks good and second of all it just taste different. It’s a burst of different flavors when vegetables are cut thin. When you have a large chunk of red pepper you only taste the red pepper. But when the pieces are finely chopped, you start having a party in our mouth.. you taste the peppers, the mint leaves, the cashews, the dressing which brings the salad to a whole new level. For the visual appeal, well the salad should stand nice and tall. Like a little tower or a volcano. Mine was not as tall as it should but I will get better at it!

Then we prepared the Macademia Banana Granola which is now in the dehydrator until tomorrow morning which we will taste for breakfast. I will tell you more about it tomorrow! We also learned how to make nut milk. This was nice and delicious! We made a mid-afternoon snack with the left-over milk and you can find my Choco-Banana Smoothie recipe at this link. Enjoy!
