Day 4 @ 105degrees Academy

Spice C Smoothie

Today we talked about superfoods… In a nutshell superfoods are foods so concentrated in nutrients and so bio-available that you need just a little to get a whole bunch of nutrients in your body. We talked about cacao, maca, goji berries, bee pollen and spirulina to name a few. We then made a smoothie with orange juice, pineapple, goji berries, lime juice and a little cayenne. It was pretty good and the color was beautiful. Very healthy and nourishing drink.

We then made very interesting dishes with the coconut wrap sheets we dehydrated overnight. We cut squares out of the sheet and we filled it with nut cheese, avocado, tomato and basil for the red wraps and an Asian shiitake mushroom filling for the white wraps. It was delicious.

And that’s what I had for lunch. It does not look like much but I was absolutely stuffed! Once our lunch was over we made some salty coconut to top the custard tarts we finished making last night. We had tea and coffee and dessert. The custard was so rich it was hard to believe it is raw! I took some left-over home to have during this week-end…

Shiitake Coconut Wraps


This was my first week of raw culinary school. Interesting, fun and very delicious! I can’t wait for Monday and start week 2. Again don’t forget that 105degrees cafe opens officially tomorrow at 5pm!
