Day 3 – Coconut Fight

Today started early. Fox News came to do a segment about 105degrees. It was… 5:45am! Well you can’t really choose when you shoot live TV I guess. Here is a picture of some of us at the Academy with anchor Lauren Richardson:

It was very interesting to see live TV from this end of the camera. Anyways, back to food… Coconut day… Yes that wonderful nut so hard to crack open until we opened a whole case of it! There is nothing like practice, right? So here is the starting case of Young Thai Coconuts:

Cracking the first coconut was a disaster. I had never handled a cleaver and I was a little intimidated to say the least! In addition to using this scary knife, force and aim is required. I have force down but aim is really not my forte. However after the 4th coconut my aim was slightly better and force stronger and I managed to open all the coconuts, empty their water in a strainer and scrape the meat out of it! Here is the proof:

The rest of the day was pretty much prepping for tomorrow. We prepared wraps which are dehydrating overnight out of coconut meat for tomorrow. One was straight coconut meat, the other one was mixed with red pepper juice. That will make the wraps orange. Very pretty! We will see tomorrow what will become of them! We also made a raw custard with a nice orange tint to it due to the mango we used. That is in the fridge for tomorrow…
