Raw almond yogurt with apple cinnamon topping to wake up your taste buds!
High-speed blender, dehydrator
- Make the almond yogurt first by mixing the almonds with the water. Add the agave nectar (or raw honey) and acidophilus. Blend until smooth adding water if necessary to right consistency.
- Place the yogurt in bowl covered with cheesecloth. Dehydrate at 100 degrees for 8-10 hours. A dry film will develop on the top. Just mix it in and adjust water content for proper texture. Store in refrigerator for up to 5 days.
- Take 1 cup of the yogurt and place it in a bowl. Sweeten it with agave or raw honey to your liking. Add vanilla extract and mix well.
- Mix other ingredients and top yogurt.
- Garnish with cacao nibs.
You can use any seasonal fruits to top or mix in your yogurt. You can also use it as a base for your smoothies. Store the yogurt in clean glass jars up to 5 days in your refrigerator. Do not eat if it smells or tastes bad. It should taste like yogurt with an almond flavor. To take the skin off the almonds, quickly dip the almonds in boiling water. The skin will be removed easily. If you choose to keep the skin on, dip the almonds in boiling water regardless to avoid contamination with bad bacteria. Only use clean utensils especially when fermenting.
